The top surface is polished to a high shine, and the four corners are rounded. The top and bottom edges are beveled to prevent injury.

Natural marble has high thermal conductivity and low specific heat capacity, making it cool to the touch. This helps to suppress the temperature rise of dough, preventing it from becoming sticky. It is highly useful for kneading pizza, bread, pie, and pastry dough, as well as for confectionery work with chocolate.
